This 18-inch-long, oval roaster is extremely versatile and can cook up a wide selection of giant roasts and meals for holiday entertaining or other large parties. As with cookware from earlier eras, this roaster is constructed of heavy and sturdy cast aluminum, which is a marvelous conductor of heat for fast and even cooking. The exterior is brushed and has an elegant silvery finish that makes it spectacular for serving as well as cooking. The interior is coated with Eclipse, a premium, long-lasting nonstick surface that makes the usual baked-on fat and grease from roasting meats much easier to clean.With the cover off, this heirloom-quality pan roasts a huge turkey or roast beef. However, the roaster also has deep, 6-inch sides and a dome-shaped cover (also with an interior coating of nonstick), making it ideal for braising meat dishes, such as short ribs with noodles, steaming numerous fish fillets, or poaching a whole salmon. The domed cover plays a large role in the success of these moist-heat cooking methods as it keeps moisture from escaping and encourages self-basting of meats. Additionally, the roaster is completely safe for using on the range top on low to medium heat so meats can be browned and roasted in one pan.
Two amply sized 1-1/2-inch tab handles on either side of the roaster are oven-safe and ensure a secure hold on this substantially weighted piece when lifting it out of the oven or bringing it to the table. The riveted stainless-steel handle on the top of the lid conveniently stays cool under high heats. This roaster comes with an anodized aluminum meat rack (which is really more like a trivet) that lifts roasts just a tad above the bottom of the cookware. To enjoy extended use with this roaster, the manufacturer recommends washing it by hand in warm soapy water and discourages the use of metal utensils, knives, or abrasive sponges that could damage the nonstick coating.
