Rusogollas are essentially bengali sweets and are made from paneer.. ( I have already posted the paneer making in my channel ) This is how you make rusogollas.. first off knead the paneer into a fine dough .. ( it will be owdery at first, but as you go kneading it , it will show some cohesion and form a dough ). Make small balls from out of the dough and insert into the center of each of them, a small peice of sugar cube.. This will make the paneer juicy and porous when cooked.. Next make a sugar syrup with 200 to 400 gms or more of sugar ( depending upon your need for how sweet it should be ) in one litre of water.. mildly heating the water if necessary to expedite the process of dissolution ..Add the paneer balls into the surface and place the vessel in a pressure cooker and cook for about 5 minutes with the weight valve in place .. After removing from the cooker, remove the rusogollas into a separate vessel and use the syrup for the remaining rusogollas. Place all the rosogollas in a vessel and refrigerate.. Serve cold.. EAT ! Dont worry if the rusogollas do not become entirely spherical. The sugar cubes are inserted so that when the paneer is cooked, the sugar dissolves and leaves a cavity containing sugar syrup within the rosogollas...
